My wonderful cousins granted my wish to go to New York. Even though it was only for a weekend and way to short it was good enough for me.

Halfway through our 4 hour drive from DC to New York we decided to eat lunch. I realized that the hardest thing on a road trip was deciding where to stop and eat. It’s always a confusing discussion with a lot u turns. My only request was no fast food joints that we have in Manila.

Since Sha was the one driving and making all the u turns she finally made the executive decision to eat at Waffle House. It was a restaurant we’ve seen all over the US but none of us have ever tried it.

Sha and I split the cheesesteak sandwich and biscuits and gravy.
The food was surprisingly edible! What I liked most was the normal sized servings. No over sized, over stuffed, over priced food here.

The biscuits were just ok and not as good as the one at Bob Evans. The gravy was quite yummy though.

Of all the restaurants in Reston Town Center that I’ve tried my favorite is PassionFish.

Even though the toast was almost burnt and quite hard we loved the smoked fish spread. It was mild yet flavorful.

I don’t eat raw fish but I tried it and I really liked it! It was very fresh and didn’t taste fishy at all. The mustard soy dressing gave a good and spicy kick to the mild flavors of the sushi.

Normally a bowl of blue crab and corn chowder costs $9 and the Crawfish Etouffée $14 for a total of $23. But since it’s special we paid only $15 for both.

I loved the chowder very, very much. It had chunks of fresh blue crab and the soup wasn’t too thick. The flavors were definitely Southwestern.

We went on a Wednesday so I had the crawfish. I was already full from the toasts and spread, sushi and soup so I just ate a little of the yummy etouffée. The crawfish was plentiful and the sauce was rich and tasty. La brought the leftovers for her lunch the next day.

La is smart. She ordered the fried oysters appetizer instead of the Louisiana Fried Oyster PoBoy which was exactly the same minus the bread. It was my first time to try fried oysters and it was really, really good.

I really wanted to go back to PassionFish on a Monday to eat the Maine lobster roll but it was a Tuesday when I went back with my aunt and uncle who were visiting from Dallas.

I’ve never tried grits before so I was quite wary to order the lunch special. To my happiness the grits were creamy and mild. It reminded me of wet mashed potatoes with texture. It was perfect with the spicy shrimp and smokey strips of tasso ham, a Cajun specialty.

Here’s another recipe I made when I was in Virginia using mushrooms. It’s a good thing my cousin La loves mushrooms too since all the meals I cooked in her house contained mushrooms.

I saw this recipe on Smitten Kitchen and I filed it on my simplenote iPad app for cooking in the future. Since I had mushrooms leftover from the creamy mushroom truffle pasta I made previously, it was the perfect time to finally make mushroom crêpe cake.

I sliced the already sliced mushrooms even thinner so it will lay flat in the crêpe layers.

We only had sliced provolone cheese at home so I used that.

I cut the cheese into smaller pieces so it will melt easier.

Make the mushroom filling and set it aside to cool. It will be a thick, gooey mixture when cooled.

Our first few crêpes were a disaster but that’s to be expected according to Alton Brown who made the original recipe.

La finally got the technique down to pat. She put a little butter on the non-stick skillet after every 3 crêpes.

I placed a crêpe on a baking sheet and did the layering directly on it. It doesn’t have to be perfectly round. You can trim off the excess crepes when all done.

Super cheesy, earthy mushrooms nestled in soft layers of buttery crêpes. Can mushrooms be more decadent than that?

The mushroom crêpe cake was so delicious but a bit too rich. A small wedge  with a side salad was just perfect for our dinner.  It wasn’t really hard to make. Try this at home!!!

Adapted from Smitten Kitchen and Alton Brown

Serves 6

1 cup yellow onion, diced
3 tablespoons butter
1 pound button and baby bella mushrooms, thinly sliced (use any combination you want)
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1 teaspoon flour
1/2 cup  milk
1/2 cup mild white cheese, mozzarella or provolone, shredded
Savory crêpes, recipe follows
2 tablespoons chives, thinly sliced (I skipped this)
1/4 cup Parmesan, shredded

In a large sauté pan over medium-low heat, melt one tablespoon of butter and begin to cook the onion so that it “sweats” but does not gain color. Turn the heat to medium-high, add all of the mushrooms and remaining two tablespoons butter. Season with salt and pepper and sauté until mushrooms are soft. Stir in the flour, then drizzle in the milk while you stir. Reduce the liquid in the pan by half. Add the provolone or mozzarella and let it melt. Immediately take filling off the heat.

Layer two crêpes on a buttered sheet pan (Brown says that this allows you to still save your cake if the bottom one sticks — smart!). Spread a thin layer of the filling onto the crêpe, then a few chives. Top with another crêpe and spread more filling. Repeat this process until you are out of filling. (You’ll likely run out of filling before crêpes.)

Top with the final crepe and sprinkle on Parmesan. Place under broiler until Parmesan is melted and golden brown. Place onto a cutting board and slice into wedges. Serve immediately.

Savory Crêpes

The original recipe suggested one include herbs, spinach or sun-dried tomatoes in the crepe batter. I used herbs and honestly felt it added nothing; I vote for you to skip this. If you want to add those flavors, do it where they will be more effective, in the filling. I was able to eke out 6 crêpes in an 8 1/2-inch skillet. I would have had extras were the first couple not duds.

2 large eggs
3/4 cup milk
1/2 cup water
1 cup flour
3 tablespoons butter, melted
1/2 teaspoon salt
Butter, for coating the pan

In a blender combine all of the ingredients (excepting the butter for coating the pan) and pulse for 10 seconds. (I used an immersion stick blender) Place the crepe batter in the refrigerator for one hour, or up to 48 hours.

Heat a small non-stick pan. Add butter to coat. Pour a couple tablespoons of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and throw the crepe in the garbage; seriously, the first one is always cursed. Sometimes the second too. By the time you get to the third one, go ahead and keep what you made, even if it’s not perfect. Lay the crêpe flat on a large cutting board to the cutting board to cool; continue cooking until all of the batter is gone.

Do ahead: Crêpe batter can be made up to two days in advance, stored in the fridge. Cooked, cooled and well-wrapped, crêpes can be stored for several days in the fridge or up to two months in the freezer. Frozen crêpes can be thawed on a rack; gently peel them as you need. Filling can be made a day in advance; reheat slowly, over a low flame.

Portabella Mushroom w/ Seafood Stuffing

Yes, I baked this stuffed portabella mushroom but I didn’t make it from scratch.

My cousin La was so busy with her work in DC and running around with her kids and their after school activities so I volunteered to get our dinner at Costco. I love Costco and would go gladly go for any reason. I walked around and around the food section looking for something easy to make. I already bought the roast chicken and I didn’t feel like eating pasta.

On my first round around the chillers I didn’t notice the mushrooms but it’s a good thing my eagle eyes saw it lying beside the cooked paella. I love mushrooms so this was a fast and easy decision.

A package contained 2 huge portabella mushrooms stuffed with a seafood mixture and topped with cheese. The mushroom on the left measured about 6-7 inches in diameter.

The instructions were pretty simple. Bake the mushrooms in a 350F  oven for 20-30 minutes. The stuffing was made of pollock, whiting, cod, bream, shrimp, lobster, cream and spices. All that for only $10.48!

I placed the 2 mushrooms on an ungreased baking sheet and removed the shrimps on top so they will not overcook.

When almost done I returned the shrimp on top and let it warm for a few minutes in the oven.

La, Erin and I shared 1 mushroom for dinner.

It was so, so scrumptious! The portabella mushroom was so thick, tender and meaty while the seafood stuffing was so delicious. The stuffing was rich without being too creamy. It was very filling and fulfilling.

For a side dish I made corn esquites similar to the ones I liked so much at Rosa Mexicano. I opened a can of corn and placed it in a small saucepan.

I added some light sour cream, just enough to cover the corn.

I then squeezed a generous amount of lime and season with salt and lots of freshly ground pepper. It was a big hit with my niece Erin who brought the leftovers to school the next day. This was a healthier and equally good alternative to creamed corn.

We had a simple dinner of stuffed portabella mushroom, corn esquites and leftover pizza.  Ahhh life in America…. I love it!!!

After brunch at Carlyle we went to Best Buns Bread Company next door. I had to see the place where all the wonderful bread we ate at Carlyle and Coastal Flats came from.

When we opened the door we were assaulted with the heavenly smell of freshly baked bread and all kinds of sweet breads.

Even though I was so full from brunch I still managed to buy some goodies for take-out. I bought bacon cheddar and orange currant scones for our breakfast the next day. They were good but not the best I’ve tried. I did love their chocolate espresso chew cookies! They were really chewy and chocolatey.

They brought me to Shirlington, an urban village in Arlington, Virginia. I really liked the way it looked, with red brick roads and so many restaurants side by side.

At first I was hesitant to order crab cakes again since I just had it for dinner the night before. But how can I resist crab cakes Benedict on a biscuit? Just the word biscuit on the menu sold this for me.

I specifically ordered my poached eggs to be runny. OMG let me tell you this was one of the best meals I had in my trip. The combination of fresh lump crab cakes with crisp, light biscuits, runny eggs and creamy hollandaise sauce was too die for. It was rich yet not too heavy like Sha’s steak. I managed to finish one only. Sha took home the other one for her lunch the next day and now she’s also a crab cake Benedict convert.

My recent trip to the USA had me rethinking about American Food. It’s definitely not the stereotype I had in my mind. My meal at Clyde’s was definitely good American food.

Clyde’s of Reston is just one of the 13 restaurants under Clyde’s Restaurant Group. This was located in my favorite Reston Town Center.

Their drinking water was in pitcher that looked like stone. Believe me it’s as heavy as stone too. A pitcher is placed on each table for self-service. Great idea so we didn’t have to wait for water refills.

Crabs are abundant in Manila and it’s usually served whole and you have to pick all the meat yourself. That’s probably why I don’t eat much crab. I’m too lazy. When I saw crab cake on the menu I wanted to try it.

Wow huge pieces of lump crab with barely any binders and loosely packed into a cake. It was simple and yummy. The crab meat was succulent and fresh. I wish we had crab cakes in Manila’s restaurants.

CLYDE’S CRAB CAKES
(Serves 2)
It is important to pick over them crab meat gently to remove excess shell and cartilage. This is one of our most requested recipes.
1 lb.
jumbo lump crab meat
1/3 cup
mayonnaise
1 tbsp
water
2 tsp
Old Bay seasoning
1 tbsp
Dijon mustard
1 tbsp
chopped parsley
4
saltine crackers

1. Pick the crab meat over to remove excess shells and cartilage.
2. Combine the mayo, Old Bay, parsley, mustard and water until smooth.
3. Add the mayo mixture to the crab meat and mix, being careful not to break up the lumps of crab meat.
4. With your hands, break up the saltines into crumbs and mix into the crab mixture.
5. Form into four patties and pan-fry, or broil the cakes until golden brown.

We had lunch at an authentic Mexican restaurant called Rosa Mexicano when we were at National Harbor in Maryland.

La and I ordered tacos. I chose pork and she had the mixed veggies. Both were good and really authentic. The portions were generous too. My pork was very tender and had a smoky taste. My favorite though was the corn in sour cream with lime juice & chili powder. It really gave my taco a nice flavor kick.

Tacos are served in a cast iron skillet with red bean-chorizo chili, corn esquites, chile de árbol salsa and freshly made warm corn tortillas.

I put a little of each on the tortilla. The flavors were fabulous! There was so much pork left over for me to take home. An order of taco could easily feed 2 people.

Two soft corn tortillas filled with shredded chipotle beef. Topped with Veracruz mole made with raisins, plantains, hazelnuts, pine nuts and ancho and pasilla chiles. Garnished with crema and queso fresco.

Erin had the kids’ meal of cheese quesadillas that came with a soda and a scoop of vanilla ice cream.

My cousins Sha and La brought me to National Harbor in Maryland. It was a beautiful day to be outdoors.

National Harbor is a relatively new waterfront development on the shores of the Potomac River. It has hotels, residential condominiums, retail stores and a marina.

We bought a loaf of dark chocolate, coconut banana bread from Havana Banana Bread for $12. It was so good and I loved the addition of dark chocolate and coconut. It was a wonderful combination. We had the banana bread for dessert and breakfast with tea and coffee.

The best burger I ever ate – Ray’s Hell Burger

This is the best burger I’ve ever eaten SO FAR. There are so many burgers I haven’t tried in Manila and in other countries but for now this is the BEST burger ever.

Before going to the USA for a vacation I really planned to try as many burgers as I can to find the best burger. In Manila I already declared Chili’s as the best with Borough as a close second.

I’ve tried In-N-Out and Five Guys on previous trips and I wasn’t really impressed. Upon Sha’s recommendation La and I went to Ray’s Hell Burger for a late lunch.

It was around 1 pm and the line was out the door. Nobody minded standing under the hot, hot sun as long as we all got our burgers.

Remember the soup Nazi from the tv show, Seinfeld? The staff in red shirts reminded us of the soup Nazi. “Compress and move forward!” “Stay close to wall.” It was really effective though. The line moved fast.

The restaurant was your basic self-service restaurant. You get your own plastic utensils, condiments, water, napkins and even the take-out box from a table across the counter.

The place didn’t even look as nice as fast food joints. But then nobody cared about the ambiance. Everyone was there for the burgers.

Initially I wanted to the burger with seared foie gras and truffle oil for an additional $9 to the burger priced at $6.99. Then I thought I wanted to enjoy the taste of the burger first and not get distracted by the foie gras and truffle oil. So I ordered the next best thing. Roasted bone marrow on my burger. So sinful right?

This is the only burger that I’ve eaten that tastes like chopped steak instead of ground beef. I could really tell the difference with the aged beef. I think another reason it was so good because the beef was still slightly pink. It was indeed the juiciest, tastiest and richest burger I have ever eaten. The price I paid was definitely a steal.

The sweet potato fries were the best and sweetest I’ve ever eaten too.

As usual I left the bread behind. The burger was so big I definitely couldn’t have finished it if I ate the bread too.

La ordered her burger with cave-aged Irish cheddar for an additional $3. The cognac & sherry sauteed mushrooms were free.

I got a blood orange milkshake which was sooooo good. It tasted like a creamsicle. I really liked the small size of the shake. La had the brown cow.

I didn’t really appreciate the bone marrow on my burger. The beef patty didn’t really need anything on it except maybe a dash of salt and pepper.

Next time and there will be a next time I plan to order a plain burger. Hmm maybe I’ll add some mushrooms and roasted garlic. Then after that I’ll go back another day and try it with foie gras and truffle oil.

When you have a good product you don’t need fancy, schmancy decor, expensive advertising or even a good location. If the food is good people will talk about it and try it and they will share their experience with more people. That is good business.

Please do yourself a favor. Go try Ray’s Hell Burger. It will ruin all other burgers for you. Why even President Obama brought Russian president Dmitry Medvedev to eat there!
